Tomatoes

A couple of weeks ago I told Catherine I was getting an itch to try canning again and we thought it would be fun to try tomatoes next (so glad I've got Catherine to try this stuff with!). The very next day Catherine found out that Hunsader Farms (a u-pick near her home) had tomatoes up for $1 a bushel. She took her kids and picked A LOT of tomatoes and we got together to bottle salsa and stewed tomatoes. It was a fun day (much less stressful than the peaches and pears in the fall), and it was very productive.

We went from this:

To this:
(12  quarts of stewed tomatoes)

And this:

(53 pints of salsa)

Bryan left that morning for St. Louis, so while we canned the kids played, ran around the house, caused chaos (which they loved!) and finger painted.

Rob...being the brother of the year that he is, sanded and put part of the bed that he, Bryan and their Dad built in February, but that Bryan hasn't had the time to finish up. (He got it to a point that I think Bry and I will be able to finish it this weekend). Thanks Rob! And thanks Catherine for a fun day!

So jealous! wish I was there to do all that fun stuff too. You'll have to send me the recipe for the salsa.

I am very excited to dig into the yummy salsa. Kim, I wish you were here to do it with us too. That would have been tons of fun. You should get the recipe (it is a fantastic one) and make some. Emily, I had fun and can't wait to do some more.

I forgot to add, Thanks for finishing up the last few batches of salsa all on your own. I know you were busy and must have stayed up late to get it done. Thank you! I owe you.

Way to go!! The tomatoes look great. You will love them.I did 95 quarts with my daughter last year. I told you that they were a lot easier to bottle than peaches.
